Organic Salad Recipes to Spice Up Your Christmas Lunch

It’s almost that time of year again. The time where we press pause on our perpetually busy lives to be with our loved ones, exchanging gifts and indulging in treats of all sorts.

 

I think we’d all agree that it’s relatively easy at Christmas to let your healthy food standards slip, especially if you’re catering for a lot of different tastes.

While it’s great to treat yourself on this special occasion, there’s no reason why you can’t add a few organic and fresh dishes to your Christmas lunch – and with easy, mouth-watering salad recipes like these, you’ll definitely want to!

The Christmas Crunch

Estimated time: 15-20 minutes

Ingredients:
2 cups cauliflower
2 cups broccoli
1 cup red cabbage, roughly chopped
1 cup carrots, roughly chopped
1 ½ cups fresh parsley
2 celery stalks
½ cup almonds
½ cup sunflower seeds

Dressing:
3 tbsp olive oil
½ cup lemon juice
1 tbsp fresh ginger, peeled and grated
2 tbsp clover honey
½ tsp sea salt

Method:
1. Place broccoli, carrots, cauliflower, celery, parsley, cabbage, almonds and sunflower seeds in a food processor on low speed until finely chopped.
2. Place the dressing ingredients in a jar with a lid and shake together. Alternatively, put all ingredients in a small bowl and whisk.
3. Add ingredients in a large bowl and pour dressing over.

Chicken & Avocado Delight (ft. Homemade Mayo)

Estimated time: 20-30 minutes

Ingredients:
2 cups cooked chicken breasts, cooled and diced
½ cup purple grapes cut in half (or diced apples)
½ cup chopped walnuts, pistachios or pecans (or your favourite nut)
2 tbsp chopped chives
1 ripe avocado diced
Sea salt and pepper to taste

Mayonnaise:
1 cup light olive oil
1 tsp spicy brown mustard
1 egg
½ lemon, juiced
Salt and pepper to taste
*all Mayonnaise ingredients should be room temperature

Method:
1. Put mayo ingredients in an immersion blender (if you don’t have one a regular blender will do) until mayo is of a thick consistency
2. Combine all salad ingredients except the avocado and stir in with mayo.
3. Add sliced avocado to the top and serve!

3 Step Mango Magic

Estimated time: 15-20 minutes

Ingredients:
1 cup quinoa
2 cups of cold water
¼ tbsp salt
1 mango (diced)
¼ cup almonds (sliced)
2 tbsp pumpkin seeds (roasted)
1 medium sized cucumber (diced)

Dressing:
2-3 tbsp olive oil
2 tbsp lemon juice
2 tbsp cilantro
Salt and pepper to taste

Method:
1. Mix quinoa, water and salt in a pan on medium heat and cover to boil
2. Leave to cool while mixing the dressing
3. Once quinoa has cooled, mix mango, cucumber, almonds and pumpkin seeds in and pour the dressing over
