Strawberry & Coconut Milk Ice-cream

Ingredients

200g Fresh or Frozen strawberries

tablespoon maple syrup

squeeze lemon juice

400ml tin coconut milk or cream

Method

In a food processor, puree 200g of strawberries with the maple syrup and lemon juice.  Add the coconut milk to combine.

Place in the fridge for 30 mins or until chilled

Add to ice-cream maker and follow manufacturers instructions.

Extra flavour hit:  Strawberries love basil, so add a few leaves when pureeing for a grown-up flavour
